Saturday night drinking beers and making pizza. They still haven't taken this one small joy from me yet, boys.
The crumb is looking a bit sexual.
>>22044716Enjoy, ladI miss the days when I could eat and drink beer at night and still get to sleep
Individual slices go back on the steel for 30 seconds for the authentic NEW YORK experience. The paper plate is also authentic.
>>22044731bzzt. nothing new york about what you're doing
>>22044731Looks really good. Recipe pls?
>>22044738Be for real, mine looks way better than that dollar slice bullshit.
>>22044716>theyweak pussy
>>22044716Heck ya bud, keep ur stick on rhe ice
>>22044748k retard
>>22044743It's 65% hydration, 3% oil, 2% salt, 1% sugar, .2% instant dry yeast. Room temperature bulk ferment for about 3-4 hours, then balled and put in the fridge. This one was in the fridge for about 20 hours so the others in the fridge are gonna be even better. 3 days is usually the best.
>>22044722how do i crumbmax like you
>>22044766Can I get a recipe? Please saar. I wish to make homemade pizza pie like you.
>>22044768A lot of practice, honestly. I'm still shit at these NY style joints but I just gotta keep at it. The hardest part is the shaping so just look at Youtube videos of that and then send it, bud.
>>22044731your paper plates make you look like a virgin
>>22044786>look like
>>22044783That was a recipe, sir. Baker's percentages, everything goes off the total amount of flour. So if you have 1000g of flour, 65% hydration would be 650g of water, 3% oil is 30g of oil, and so on.
>>22044786I'll drink to that!
>>22044794That's impossible to follow. Can you give me real measurements? And what do I do after I make the dough? Use it immediately? What sauce do I make? What cheese do I use? What oven setting? Where do I place it in the oven? How long do I cook it? Please help me saar. If I can cooking a pizza like that in my home I can surely make a Canadian wife to be appearing.
>>22044810Sir. Please to checking the substack, sir.
>>22044746Being for real, your cheese game is very very weak. Sauce game also very weak.Your crust looks fantastic and much better than the normal dollar slice places, in terms of the char and shape, but it looks like it’s missing flavor/texture.
>>22044860Fair enough. I'm limited by my flyover-ass grocery stores having shit cheese. Can't even get whole milk mozz.
>>22044907>Can't even get whole milk mozz.Based and deserved
>>22044716Cheese bread is not pizza. You are dirt poor and should never be allowed to cook.
>>22044860Gotta love how retarded the pizzalets. They judge pizza by how burnt the crust is when in reality properly made pizza doesn't have burnt crust at al. That's Europoor shit.
>>22044907If you have a walmart they should have galbanihttps://www.walmart.com/ip/Galbani-Part-Skim-Milk-Low-Moisture-Mozzarella-Cheese-Block-16-oz-Refrigerated/51259532For the sauce you need to get it a little thinner so it doesn’t congeal when you cook it. Crust looks really good, try hitting it with some cornmeal though.
>>22045042Actually I’m judging the evenness of the cook and the overall gluten integrity: both look ok. It’s overcooked because of the cheese not melting fast enough, cooklet.Needs some cornmeal too to allow for more airflow.
>>22044716>>22044722>>22045042>>22045048Also you can tell OP doesn’t brush the crust with any olive oil so it looks dry.
>>22044907https://leospizzirri.com/pizza-sauce-at-home/You are very close to an outstanding result anon… keep going!I hope to see the improved version soon.
>>22044716
>>22045044>>22045048>cornmealErm...no.
>>22045258No one cares about this youtuber-tier faggy crap. Well, maybe people who watch videos and argue online about what’s “correct” like you do.“People” like you are pointless cunts.>that flour isn’t ACCKSHUALLY from scratch because you didn’t harvest the wheat!>it’s not AUTHENTIC because you didn’t conform to my random guidelines!Fuck off
>>22045334It has nothing to do with any of the irrationally angry drivel you just wrote and more to do with the fact that cornmeal makes the pizza taste like burnt popcorn.
>>22044716from the thumbnail I thought it was a baked cauliflower casserole. gross
>>22045352Yeah I'll probably go back to grating the cheese. Cubing it did not have the effect I thought it was going to.
