It's 65% hydration, 3% oil, 2% salt, 1% sugar, .2% instant dry yeast. Room temperature bulk ferment for about 3-4 hours, then balled and put in the fridge. This one was in the fridge for about 20 hours so the others in the fridge are gonna be even better. 3 days is usually the best.

That was a recipe, sir. Baker's percentages, everything goes off the total amount of flour. So if you have 1000g of flour, 65% hydration would be 650g of water, 3% oil is 30g of oil, and so on.

For the sauce you need to get it a little thinner so it doesn’t congeal when you cook it. Crust looks really good, try hitting it with some cornmeal though.
