I like cabbage and sour kraut but I've never had kimchi I assume I would like it

my dad married a korean, so one year at thanksgiving her mom wanted to give me a piece of homemade kimchi. i told her just a small piece because this was a long time ago, and i hadnt even heard of kimchi yet. she gave me a big floppy, wet, smelly leaf as big as my arm and it was so extreme and pungent that i couldn't finish it and i havent really been able to have kimchi ever since...

I recommend all coo/ck/s try making kimchi. It's super easy and cheap.
You don't need to use any fancy Korean ingredients like Gochugaru either.

Yeah you gotta do it in batches.
I usually do a blend of cabbage, carrots and spring onions.
This recipe is similar to what I do. It also uses fresh chopped chillis for heat
