The reason why the world's ACTUAL best blue cheese will never win the "world cheese awards" is because the people producing or refining it have no reason to participate in the 'competition'. Only a few hundred wheels can be produced every year and it is more than popular enough to sell as is.

it's called respecting your consumers. rogue river blue is expensive as shit (i'm assuming it is because of the increased demand, though perhaps it was already expensive beforehand) and is about twice as expensive as bleu de termignon at 48 USD per lbs vs 19.95 euros per 500g. the people making it are autistic as shit (at least the 2 people I know who are involved in its production) and want to avoid a chartreuse verte situation.

that term is used rather loosely these days. most of the time it's just a temperature and humidity controlled room. like a humidor for cheese.
for Maytag they just dug holes in the side of a hill next to their dairy. they are technically "real caves" but theyre not naturally formed or anything.
very few cheesemakers use natural caves, so it's not like they should be ridiculed or anything.
