Almost all of the quality beef gets sent to the states because they get way more money for it. What's leftover is the old ass cows and bulls. Lots of mexican cuisine revolves around making cheap cuts/poor quality meat easy to eat and tasty(like most poorer countries). That's why asada is always chopped into tiny bits. Even tough cuts can be fried up and they'll still be easy to eat.

Yep. I only bought steaks from local farmers as a special treat because a ny strip is like $30+ dollars/lb, and ground beef maybe once a week or so before I slaughtered the bull I was raising. Now I eat beef multiple times a week and it is extremely good quality.

Cheap meats are just not worth it to me after I've had good chicken, pork, and beef. All of which I raised myself. Pork especially.

You can't. You're being sold ribeye (it's got to be good) at a premium price. While it's technically ribeye the cut is too thin and the meat is off colour. It comes from an animal which hasn't moved an inch in its life and never saw a decent bucket of proper food. No amount of sriracha or soy sauce can save that level of fucked up.
