>>22047933reminder that you can make your own american cheese quite easilystep 1: get some sodium citrate. either buy it online or make it out of a gently heated 2.1:2.5 by weight mixture of lemon juice and baking soda (it should taste pretty neutral, maybe a teeny bit lemony but you won't be able to taste it once you add the cheese)step 2: add a bit of water or milk. personally I prefer milk but water does work fine. don't add much, you can always add more later.step 3: add your cheese. you can use any cheese that melts well, gouda, gruyere, cheddar, emmental, colby, etc.step 4: once melted into a thick, smooth sauce (if it isn't smooth, you need more sodium citrate), add it to a mold and leave it in the fridge overnight.step 5: enjoy your homemade, tasty American cheese. make yourself a beautiful grilled cheese sandwich or mac and cheese. in fact if you're just making mac and cheese you don't need to cool it overnight, just toss your sauce directly into your macaroni.
