What would you consider the most challenging pastry to make? Not what takes the most time and effort, but what's technically the most difficult to get just right
>>22054279brownies.people fuck them up so badly.
Anytime I try to use phyllo dough papers i just absolutely fuck them up
Cresoint
>>22054295What do you make with them?
>>22054279Before I was severely depressed, I used to make something similar. I can still taste them in my mouth years after this picture.

>>22054302I tried this greek honey layered cake, it has pistachios in it. I tried it at the small greek place that opened and it was so good. I just can't get the dough to stop breaking or be right.
>>22054279This one is, the Easter Baba, if it doesn't raise right, at all, lopsided after all the effort and resources you spent preparing it you might as well shoot yourself, prepare for disembowelment or
>>22054303>>22054305Are you the anon with the stomach problems? You pastries look amazing.>>22054314Have you tried different brands? Some are better than others. I buy this one where they put semolina starch between the sheets so they don't stick to each other, I mean you have to be a little careful.

>>22054331I have tried a couple brands. I think I am just wanting to make the layers (honey and nuts) be too fat. I will keep trying.
>>22054373When I make something with filo sheets I tend to make it thinner because it comes out more crispy and I like that texture, it's the best thing about those sheets.
>>22054385I agree with you, I just need to make the honey and pistachio mix more ground up together
>>22054392Oh I see, probably thats why the sheets are breaking. Use a food processor if you have one.
>>22054303>>22054305Damn impressive
>>22054279My guess would be either laminated yeasted doughs or something from the fancier brioche family that uses starter doughs and takes long times to leaven (e.g. panettone).
>>22054434Panettone is difficult to bake cause it might collapse.
>>22054303ooooooo looks great. can already imagine each layer flaking away by the bite.
>>22054331>>22054428>>22054497Thank you.Yes, it’s me, the stomach is pretty fine now but it gets fucked up by coffee (I had to abandon it) and I have some residual gut problems.I’ve lost all the joy associated with making and eating food, but at least I have some good memories…
>>22054563Glad you are at least better. I stopped drinking coffee 6 months ago, it was pretty easy, I don't think it actually made a difference desu.
>>22054563coffee fucks my stomach up too. Used to drink 1 cup a day (was a highlight of my shitstain of a life) and i can only have 1 a week now.
>>22054563They look real good bro. I hope happiness, good health, and prosperity are headed your way
>>22054569>>22054717>>22054900Long story short: I used to drink coffee 3-4 times every day just 3 years ago, espresso and moka, then suddenly I started having problems and strange tensions and spasms in the esophagus which became worse with the years but were nothing serious like acid reflux or an ulcer so I switched to pour over which was easier on the stomach.I studied to become a coffee roaster meanwhile because I was passionate about it and wanted it to become my job, spent like 1500€ in training and also coffee equipment and then I had stomach surgery to revert the first surgery I had 8 years ago. Basically almost nothing changed and now I don’t have the anti reflux device keeping the LES in my stomach closed mechanically anymore, so if I fuck up my stomach I have no protection so each time I drink a cup, even 1 weekly, I have anxiety as soon as I feel any symptom. It’s not worth the stress living like this.Too bad I have problems with food too, let’s stop complaining here. Thanks for the kind words
>>22055099Is it just coffee? If so why did you stop making and enjoying your amazing pastries?Seems like enjoying delicacies like these once in a while would be just right to lift your spirit up again when feeling down.
