Yeah I'm not sure why. Sometimes steamed foods taste better. If I only eat browned food then after a while it feels like I start noticing the slight bitterness more and more and it becomes less appealing. Steamed vegetables and breads can taste light and sweet and clean by comparison.

DUDE I got a sick Maillard going on my smashburger thanks to the Leidenfrost effect of my high carbon steel pan! And the EVOO emulsion is ready for that saucy goodness.
