Whats a good percentage of cocoa for dark chocolate is good for baking? I always used 70.
>>22056675Use whatever you want. 70 is fine. I use 80 myself. Anything between 60 and 90 works well, for chocolate chip cookies at least.
typically in baking you want couverture chocolate, it has high fat content. they sell those in 1-2kg bags in nibble form thats easy to measure into a scalebut the actual type you use depends on the recipe
