Have you tried pork ears? Did you like it? Also nasty bits thread. I recently found that duck gizzards are quite good. You can boil them in half water half milk with bouqet garni, chop them up, butter fry and serve with some creamy sauce.

Tried them blanched + hot-smoked. Very chewy, even more so than fresh pork rinds.

Beef tongue is good and you can prep it to just look like a normal cut of meat if you dont mind wasting some. I'd just give the scraps to my dog pork jowl is also hard to find in the us unless you have an asian grocer but I really like it for kbbq

Is there any meat on turkey neck? I saw some historic turkey neck recipes used by jews that used to live in my town before the big guy gottem (Kraków). And actual jewish food is pretty good, but not the one they claim is jewish, thats just recipes they stole like, bagels and the fish ball soup.

I'd like to say it depends on the bird. I think its similar to the chicken foot. You end up with slightly more meat than that but the actual bone part is the majority of it. For me I just scrap the meat off and cast the bone aside.
