Who gets to claim creole cuisine? Whites or african americans, because if it the former than god damn they do know how to season their food or at least it the french.

Cajun here. We don't eat cooked tomatoes. They are for fresh. If it has any tomato cooked it's creole slop. Learn it live it love it. Seasoning blends that have jeet type spices, nutmeg, cinnamon, all spice etc is creole. We use French and eiuropean spices, plus cayenne. All else is an abomination. Lassé le bon temps rouler.
