Perfect thread to ask this. I do my eggs in butter/bacon fat/duck fat/olive oil (whatever I have handy). Heat pan then crack them into it. Add some water and cover. The boiling water steam cooks the tops of the eggs. My favorite way to do it but I have no idea what it is called. Googling it just says "poached" but obviously that is incorrect. This is something in between frying them and boiling them.

Someone on here suggested eggs on Vegemite toast which was lovely, I added hommus to the fray and am quite pleased with the results.
