You have to take immediate delivery as it's not a true market. While the price of popular items does rise and unpopular items fall in price, there's no reselling by customer. The restaurant is the only seller in the market. Market crashes are simulated to create interest and fun. As you can imagine, on busy nights, market crashes a very minor since the business doesn't want to lose out on the margins from high demand.
