ground anything goes rancid pretty quickly, which is probably what you're tasting. cook it the day you buy it unless you like that particular flavor

Grocery store chicken in general almost always has a rotten bite or three per serving in my experience. Ground chicken has become my go-to in order to get around that since I can brown and cover with seasoning way more surface area.
