Paprika just like many spices and seasonings can vary wildly by quality. Good paprika is really good, bad paprika doesn't do much.

I'd be curious to try freshly ground paprika. Most preground spices degrade pretty quickly. Subtler ones like paprika might just become bland while others like clove or cumin start to taste rancid.

You're not using enough probably. Same for bay leaf. If you can't feel the difference it may have been stored incorrectly or for too long, or you're not using enough, or you're an unironic noselet. You need to get back to basics. I recommend you try cooking something that is supposed to be paprika flavored. Use too much of it, see how it tastes.

Adds flavor tastelet. Even annatto, achieve, adds flower with the deep red. Turmeric same. We color our milk shakes with mushrooms, but you can taste the purple for sure.

If you get the "McCormick Gourmet" brand smoked paprika, it totally does add to the flavor. A little hint of capsaicin, a definite taste of smoke.

I agree that most "paprika" sold in stores is basically flavorless and unnoticeable unless you pour a whole bottle in. It's not supposed to be that way, it's just what the cheapo spicemongers sell.
