I live in a part of the world where bread left on the countertop will mold before it goes stale. I'm single living by myself and so I rarely can eat an entire loaf of bread before it starts to mold. What is the best way to make it last?

Putting it in the fridge will extend its shelf life.
Freezing some of it will last for months.

Move to a better part of the world where your bread doesn't mold dingbat.

>Sourdough bread resists mold significantly longer than conventionally leavened bread due to the natural fermentation process involving lactic acid bacteria (LAB), primarily Lactobacillus species. This resistance is not due to added preservatives but rather to specific biochemical compounds produced during the extended fermentation.

>The primary mechanism involves bacteria converting linoleic acid found in bread flour into hydroxylated monounsaturated fatty acids and other antifungal hydroxy-fatty acids. These compounds possess potent antifungal activity that actively inhibits the growth of common spoilage molds like Aspergillus, Penicillium, and Fusarium. Additionally, the presence of organic acids (lactic and acetic acid) lowers the pH, creating an environment that further suppresses mold spore outgrowth.

>Research indicates that this natural antifungal action can extend shelf life by several days compared to regular bread. For instance, studies have shown that sourdough fermented with specific strains like Lactobacillus hammesii can resist mold for up to 12 days, which is twice as long as typical yeast-leavened bread. This natural preservation allows for the elimination of synthetic preservatives like calcium propionate while maintaining or even improving the bread's flavor and texture.

don't put it in the fridge, it dries it out.
counter or freezer

I've put bread (in a closed bag) in the fridge and it didn't dry up.

Not op but that’s interesting info, I didn’t realize bread would have linoleic acid but it makes sense

freeze it for sure. no problem at all. i keep cut price rolls and stuff in the freezer for months.

Shut the fuck up. I will put my bread in the fridge despite what some faggot says about it.

>freeze
>fermented

Critical: NO FUCKING SOYBEAN OR VEGETABLE FUCKING OIL— it oxidizes in and out of the body for lack of anti-oxidants. They do this with gardening 'top soil' (compost only of yesteryear) and aquarium filters (look up anoxic filtration). Cheap oil, tuned preservatives to mold it at a rate they want you back buying another loaf.

Less Critical: Avoid 'Fortified' Wheat. Nutritionally dubious forms of whatever it is, butvsowcifically THE IRON encourages undesirable microorganisms' growth.

You can freeze bread. If you do not own a large freezer it is the best thing you can buy yourself.
Learn to steam buns and bread with 1tsp of water or less and it tastes perfect like it was never frozen. You can use a baking sheet to make a pan/electric frying pan slanted so the water stays to one side, then put in bread and cover.
Using excess water will make them soggy but done right they are 10/10.

toasting slices of frozen bread works well too. most loaves are pretty easy to slice straight out the freezer

FREEZE YOUR BREAD
THEN RINSE IT IN WATER (trust me)
THEN BAKE AT 450 TILL CRISPY
10/10 fresh baked bread every time
