At this point I really don't consider electric as an option. Gas or induction is really the only way.

yes but its a different method through magnetism. Heating coils vs using induction to heat the pan/pot. Induction allows for much faster heat changes, allows for faster heating in general, less heat waste that just empties into the kitchen, the heating plate only gets as hot as the pan so spills and drips are easier to clean.

look up what inverse square law is, if you measure the intensity of a light bulb from 1 ft vs 2 ft, the strength of the light is not half as much from 1 vs 2, the power drop is measured as an inverse square
for a magnetic field it's an inverse cube, so just lifting the pan up off the surface by a half inch, the strength of the magnetic field is greatly reduced compared to the surface. at 1 inch, the drop from half inch to 1 inch is an inverse cube

There are hacks for recreating (somewhat) the heat gradient you get when lifting a pan up off a gas burner but generally induction simply isn't good for that type of cooking. There are other cooking techniques that help cook things the way you want but like any other choice, there are pros and cons.
I'd be fine with induction with a few special pans like an induction wok if not for the coil whine and other sources of high frequency buzzing that comes with induction.

I know what it is, what im saying is that the specific plate that i have doesnt allow for that. Nor have i personally ever needed to use anything other than the residual heat of a pan to do something that delicate but i might just be a cooklet in that sense. When i have wanted to do something more controlled i just set it on for a couple of seconds, lift, adjust as i need, let it sit for a few seconds, repeat.
Induction definitely has its cons but for the everyday cook i honestly struggle to find them.

Isn't the magnet size sort of annoying though? I heard that the cheaper affordable ones are only small sized, and things closer a 12 inch pan (~9 inch base) shouldn't be used on them. I pretty much only use wide base cookware, which sorta sucks unless I shill out.

Also, how's the transfomer noise? The fan noise? Are they annoying?

Yes, that's the only real shitty thing about induction cooktops, most brands hide coil size. They usually post stuff like "cooking area", which is however a completely arbitrary metric.

Meme it may be, but the combustible phase out is just as real. There's a solution even for commercial stir frying. Picrel comes in models between 8 - 18 kilowatt so there's no fucking around.

Yeah, induction is better than electric, but electric is absolute dogshit, so that doesn't means much.
I have been running on induction only for years, but I still miss some features of my parent's gaz stove.
