Whens the last time you went to a old school joint? One like in the pic where the chef is jerking the pans up sautéing them, the owner comes out has a glass with you etc...

A very long time, but that’s probably because I don’t often eat at nicer places that sauté

Define "old school joints" because the spectrum of responses you are going to get is dependent on your definition of this term

I once went to this nice sushi restaurant like 20 years ago when the sushi craze was hot. The 'straunt itself had been around forever, and predated the craze and had a sort of reputation of being the OG sushi/japanese place in town.

So I'd go in with some regularity. One day the owner comes out and sits in my booth across from me. I said hello, then continued eating. Being a sperg, I have nothing to say to my fellow man and ofc it was fairly awkward for a few minutes as he exepected me to do the normie thing where you talk to the owner, etc about how great the place is. After a while he got up and walked off. He never tried to talk to me again.

I was this way back in late high school but made a point to volunteer for every single speaking role for any group assignment I was assigned in college and things got better. Food is an easy subject to fill air with.

There’s an old school diner i get a croissant breakfast from at least once a month.
I go to an old school sushi/ramen shack ran a Japanese couple that takes a month every summer to go back to Japan. Tbqh he’s getting too old.. the rice has been over cooked the past couple of times but i like the couple a lot.
The local, old school pizza and burger places closed down before Covid. Chains killed them. :(

Me and some brothers from my MC (JigC) were on a roadtrip together and we went into one of these joints. BigB was there, right there, in the joint sitting at a table with a shot of sambuca and a lit cigarillo, just burning local. Lemme tell you me and the boys were just floored. Then some old fat wop who was sitting in the corner reading a newspaper gets up and says "Now youse can't leave". Lemme tell you Johnny B ain't like that one bit. So he pulls his karambit, cuts the wops ear off and starts fucking his brainhole. Jon Bernthal son, he don't play.

If you haven't improved in any way from yourself 10 years ago then that's your fault. Don't project your own lack of effort onto others.
