I think taco seasoning packets go heavy on cumin. I go very light on that, and just pick spices that taste good. Use different ones for ground beef vs chicken. I usually like chilli powder (it should be relatively fresh, not something thats been in the shelf 4 years), black pepper, paprika, garlic, mustard powder, (onion powder if you arent chopping up onions to cook w it). Maybe a little oregano.

Adobo I just use some premade blend or whatever. The other night I just fried up some chicken thighs with adobo and black pepper. I used a different brand of olive oil I have never cooked with before and it tasted delicious, as if I have been consuming counterfeit and skunked olive oil my entire life. For me it was a perfect golden brown crispy. Then I cut it up and put it in a burrito. Although the chicken tasted amazing, there was something I was missing in the burrito. I had refried beans, lettuce, sour cream, pico de gallo, cheese. But it felt like it was missing a fat or a sauce.

Usually when I make ground beef for taco meat I make a pan sauce with the seasonings + a bit of vinegar, water, and a (small) amount of ketchup, and then it reduces down. No idea what to make for something like that to go with the chicken. Maybe I just need gauc around the chicken. Maybe I could try something with lime

I live near Mexico and make both authentic tacos as well as tacos like this. This image exaggerates, but homemade Texmex tacos are great. Just have some homemade tortillas on standby and decent refriend beanes.
