High carbs are needed for brain activity. Avoid them if you do not have that.
You're better off just being skinny fat if you're not rich enough to afford periodic lipo. Frequent calorie restriction eventually leads to adaptation: being satiated with less and not losing weight. You won't achieve movie star proportions unless you're starving, tweaking, or taking glp-1's.

It could also be for other reasons like dehydration since carbs absorb more fluid than fat or protein. I've had anemia and it made me get tired after eating carbs despite my blood sugar being normal but that's probably because anemia causes fluid/electrolyte issues on top of the other stuff. If you're consuming sugar then sugar intolerances aren't that rare and it could be lactose, sucrose, or fructose. If you're not having diarrhea then it's probably not this, though.I'm not doubting that carbs might be causing problems but it being from your body producing too much insulin is really unlikely and would be easy to prove with a simple blood test if you really want to figure out why it's happening.
