How big should I make my patties ck? I've been doing 7"diameter about 5/8" thick on the grill. They're good but medium rare in 3m each side and the size of sliders. How big should I make my next batch?

Optimal size should match bun and tomato. Thickness should be maximum 3/4".

It is actually really interesting how it all works with how dense chicken vs steak muscle fibers are and how that interacts with stuff like salmonella. Fun read next time you have time.
