How big should I make my patties ck? I've been doing 7"diameter about 5/8" thick on the grill. They're good but medium rare in 3m each side and the size of sliders. How big should I make my next batch?

the correct size is however much a handful of meat is for yourself.
you just grab a handful, make the ball, squish it flat with your palms, print the thumb, cook.

Yes. It is. After grinding, the muscle fibers become much less densley packed and now have pockets of air and water for bad stuff to thrive in. It is actually really interesting how it all works with how dense chicken vs steak muscle fibers are and how that interacts with stuff like salmonella. Fun read next time you have time.

Check out the size of whatever buns you're going to use and match the burgers up to that. 80/20's gonna shrink quite a bit. Make them at least 3/4' bigger than the bun.
