>>22070383You're legitimately retarded, aren't you? I'll break it down for you:There are four types of donut. One is a doughnut. It is made from a dough, hence the name, and usually leavened by yeast. More on that below. One is choux pastry, leavened by steam. This is called a cruller. Another is unleavened, pressure-forced dough. That's called a churro. The last is shit. It is leavened chemically using bicarb and is barely a hundred years old. It is also known as a cake donut. Notice the spelling difference here. Both doughnuts and shitty-ass cake donuts have various styles. Doughnuts include graffe napoletane, an enriched potato-dough doughnut, filled (such as Berliners AKA jelly doughnuts) and northern style youtiao (not southern style, which is more common abroad; southern are very similar to old fashioned as they're both made of a thick dough, but southern youtiao are leavened with baker's ammonia rather than sodium bicarbonate while northern style is leavened with yeast). These are all quite old.Anyway, cake donuts are the babies of the donut world. They've only been made possible by invention of the donut extruder in 1920 by a Russian Jew in New York. Prior to that, all doughnuts were made with dough, and one, which later came to be known as the old fashioned (once the Jewish-made extruder became common) is chemically leavened. Old fashioned doughnuts are made of dough, but as they're chemically leavened like cake, they are a cake doughnut. The dough is highly enriched, rolled extremely flat, cut and fried. They're flipped three times during cooking. The side that hit the oil first bursts with chemical leavening, giving it it's craggy appearance on the one side but not the other, as the chemical reaction puffs the old-fashioned into a rounder shape. Common cake donuts are 105ish years old. OFs are roughly 200 years old. Crullers are about 400 years old. Churros are 500ish years old. And yeast doughnuts date back to Roman times and before.
