Yes. Lots of countries use different kinds or concentrations of gas for cooking. It usually depends on what region of the world you're in. American cooking gas is different than European cooking gas and not even all European cooking gas is the same as an example. Japanese cooking gas is different than American and European.

Even American "gas" isn't all the same. Some people have natural gas (which is mostly methane), others have propane.

Also, what >>22070306 said. The differences are pretty much irrelevant to the cook.

I have one, and yes they work on gas and any resistive electric stove. Does not work on induction.

They work like cast iron - lots of heat retention and even cooking. You can also eat out of them. It makes pretty good rice. Rice cookers make slightly better rice since they do a longer cook, but the donabe rice is good enough. You can also brown the bottom of the rice if you like that - it's a very pretty & even brown. Also good for soup.

None of them. They all do per California.

Least risk is ceramics, stainless steel, and cast iron. Most risk is whatever teflon PFAS forever chemical stuff.
