strawberry lemonade
>>
>>22071383
550g sliced strawberries macerated with 100g of sugar
then left for a few hours
syrup extracted than strawberrie parts
added to 250g strawberry puree plus about 30g of sugar
all reduced then added back to syrup
concentrated flavour for lemonade
>>
lemon oleo saccharum
14g lemon zest and 29g sugar muddled
and left at room temp several hours
150F water will be added at a ratio of 2 parts water 1 part saccarum
then combined with lemon juice extracted from six lemons
and the concentrated strawberry flavours
>>
it will be finished with mineral water at a ratio of
1:1:5
1 part saccaraum extract
1 part lemon juice
5 parts mineral water
strawberry concentrate to flavour
total cost of all ingredients: ~>20$
will have enough strawberry concentrate for two additional batches most likely
have enough mineral water for six batches
>>
>>22071398
less than 20 bucks lol i think i fucked up my symbol
>>
>>22071383
>strawberry lemonade
nope.
you didn't make strawberry lemonade.
the correct way is to make lemonade and then muddle strawberries into it.
that's it.
>>
>>22071440
Oh look, a worthless opinion from someone who's so incapable that they can't even make Kool-Aid
>>
>>22071440
aha, that wouldnt mechanically extract the highest amount of strawberry flavour
there is probably higher level things i can do
or techniques
but this batch of lemonade is basically going to be gourmet tier
or right below that
>>
>>22071456
and it might seem “over the top”
for lemonade
but its really not that much work
hulling the strawberries and zesting is probably the most labor intense thing
but its just some stirring, minding quantities, cleaning some dishes
all worth it in order to have high quality authentic homemade strawberry lemonade
not some chemical x processed stuff
>>
>>22071451
>opinion
is that how you greet your professors of gastronomy?
you either make it like cheddars does or you're fucking up.
proof: they are more successful than you are.
>>
>>22071493
what does cheddars strawberry lemonade consist of?
>>
>>22071451
lol ty, i find it amusing people would denigrate this
instead of just learning to make their own tasty beverage
haha its so satisfying making this shit from scratch
and demistifying it and doing it to the highest level
>>
here we have assembled around 2/3 cup of strawberry concentrate
about 1 cup of lemon juice
and about 1 tbsp of lemon oleo saccarum mixed
this is the base of the flavour and will be chilled together
in a couple hours it will be pulled
and combined with sparkling mineral water
>>
this is whats left of the strawberry concentrate
ill either make more lemonade by grabbing six or so lemons
or ill turn this into a baked good like strawberry cupcakes
with strawberry buttercream frosting
>>
still one left from my last batch
on the next one i want to incorporate strawberry into the batter
not just the frosting
>>
>>22071875
Love it, will be very yummy I’m sure
>>
>>22071882
ty! yes super good. i use softened butter instead of oil for my batter
and use some sour cream as well. seems to mak an extremely good batter
a batch of chocolate ones i made
turned out insane
i love to microwave the chocolate ones and then put ice cream on top
>>
>>22071390
Didja use organic or farmer's market lemons
If not enjoy your hit of concentrated pesticides
>>
>>22071896
yes i used organic
i thought about that exact thing
im glyphosate pilled
>>
reducing further for use in cupcakes
also making spaghetti
featured also is my homemade marinara
reduced from tomatoes
>>
straining out coulis to incorporate into batter and frosting
pulp will be used as a swirl in the cupcakes
>>
it tastes good though not totally cold yet
so the lack if being cold is interfering a bit
overnight in the fridge should fix that
>>
cupcake batter with strawberry coulis
>>
>>22071896
>implying organic doesnt use pesticides
>>
>>22071888
>i love to microwave the chocolate ones and then put ice cream on top
I’ll have to try that, sounds really good
>>
cupcakes with swirl of strawberry pulp after reduction
>>
had to kind of stretch the batter on some
oven is heating up
going to make buttercream frosting with strawberry coulis now
>>
>>22072155
its amazing

>>22072141
goddamit. i thought about that too
>>
yummy!
>>
>>22071385
>syrup extracted than strawberrie parts added to 250g strawberry puree plus about 30g of sugar all reduced then added back to syrup
I'm having trouble making sense of this.
is the 550g macerated strawberries with sugar and syrup in addition to the 250g strawberry puree? like you had 800g strawberries total?
>>
strawberry coulis
whipped butter 2 sticks one salted one unsalted
heavy cream
vanilla extract
>>
>>22072187
correct, i pureed some and macerated the other
but when making the reduction used the puree
and the pulp after extracting the syrup after maceration
>>
strawberry butter cream
>>
whats left of the coulis will be added to the lemonade
this strawberry buttercream is in the bag ready for application
once the cupcakes finish cooling
>>
>>22072207
>>
these are unreasonably delicious
though i wonder if the flavour of the frosting could be improved
its good but its a bit too snappy and jarring if you will
but overall these are unfathomably good

>>
>>22072216
i also think my buttercream was a bit light on the powdered sugar
because its not holding form as well as usual
>>
>>22072218
i deliberately used 1 less cup thinking i dont it too sweet but it fucked over the structure

>>22072217
:) honestly this is why i want to cook well
because the end result is so worth it
people say its a waste of time
i think its one of the most worthwhile things to learn and do
we have to eat every day!
>>
i guess the buttercream is holding up fine
>>
>>22071634
lemonade with muddled strawberries.
should be self-evident from the previous post, anon.
>>
>>22072385
ive no idea what any of this means
no it is certainly not self evident
there are not even context clues here
i am open to trying that out
but i dont think this is the optimal way
but ill look into it
my assumption is that the ideal method involves creating syrup
im just learning this was actually the first time ive attempted this
>>
breakfast time!
>>
after sitting in the fridge overnight
its more combined and colder
the flavour is very good, i wonder if sparkling mineral water is the best choice
i may try distilled water next time
the sharpness of the minerals is very pronounced
>>
>>22071493
>>
>>22072141
they really don't look it up.
>>
>>22072216
Nice, I’m literally salivating
>>
>>22073577
checked. lol i have one left lol! all you :)
next thing im going to learn is cinnamon rolls
followed by cheesecake
>>
>lemonade
>no juice only zest
0/10 op is always a fag
>>
>>22074038
i squeezed juice from six lemons
it yielded about two cups
>>
>>22074063
maybe it was closer to one i didnt measure it
>>
brunch time!
>>
>>22074079
How tiny were the lemons to get 1 cup of juice out a 6?
