I haven't made a cheesecake since last year for the holidays, pic rel. Kinda wanting to make one soon. The last two I had were

Filling:

>395g of condenses milk
>300g of heavy cream
>12g of vanilla extract
>3 eggs
Crust
210grams of biscuit maizena
110gbof butter
Fruit jam:

the secret anon, is to use EVERY single ingredients of the fillin in a wark room temperature. Especially the cream cheese and the ggs. For the crust tou use very cold butter instead of melting it. This will make your crust more crunchy and less hard to cut. Baled it for 30 minutes at 170C, then more 30 minutes at 120C then leave in oven for more 30 minutes. After that tou leave the ovens door slighy openes for and hour.
Also: dont forget to sift the filling after you add the eggs, mix them CAREFULLY, because they can creste air in it and this will cause your cheesecake to crack
