the low sodium version of the OP brand still has 200mg per tsp which is insane. it really is like liquid salt and it's way too salty to use it for flavor.

the lowest I can find is this Best of Thailand brand but from the ingredients it seems like a frankensauce and not real soy sauce

I always get regular Kikkoman. I used to frequent a sushi restaurant that gave packets of some kind of dark soy sauce with their takeout and I did not care for it, now I'm afraid to buy a different brand because that's a lot of soy sauce that I might potentially hate and throw away after one use.

Typical Japanese soy sauce is half wheat half soybeans.
Typical Chinese light soy sauce is more soybeans than wheat but still a considerable amount of wheat.
