AAA-AA will be like 20/64ths of an inch, peaberries will be like 13 and under. If you're buying something like>Columbian Supremoyou just know those should be big AA size beans.

Being able to specifically add more buffer or magnesium is very helpful. My shitty medium roast normie french press brew a few days ago was only enjoyable because I used an appropriate water comp and dropped in bicarb by taste. Not a coffee or brewing method I'd use my low buffer high magnesium pourover recipe for.

made a 'spressowasn't good but i had fun making itmy insistence on not keeping a brew journal continues to bite me in the ass(still not gonna do it)i also tested the ppm of the water out of my espresso machine and it was only 95thats better than i get out of the hot water tank(140) (do americans call this a water heater? idk)but not as good as i got out of the kettle(70)getting kinda sick of this machine thoit just so slow and noisywish i had the space to rip this thing apart and just rebuild it.but its probably not worth it...i should just return it to my friend and buy a flair...
