Screen size. Green bean size. Different countries call their sizes different things. AAA is going to be a physically larger bean than PB peaberry. AAA-AA will be like 20/64ths of an inch, peaberries will be like 13 and under. If you're buying something like

Being able to specifically add more buffer or magnesium is very helpful. My shitty medium roast normie french press brew a few days ago was only enjoyable because I used an appropriate water comp and dropped in bicarb by taste. Not a coffee or brewing method I'd use my low buffer high magnesium pourover recipe for.

I used to drink atleast 5 cups o' joe a day. A few years ago I got sick and stopped drinking coffee. I never started coffee again.

I don't know if anyone else experienced this, but quitting coffee hurts. It's a week of bad headaches and irritability.
After this prepare for a life that's incomparably worse. I can't work with Excel anymore or do calculations in my head that used to be easy. I have a slow mind in a fast world now.
The only good thing now is that I don't have to keep up with withdrawal symptons anymore.
