what are your thoughts on handmade candies? has anyone here tried making them from scratch?
>>22074648I think I did taffy once but not hard candy. It’s interesting but a bit weird when you get into flavoring oils and such.Chocolate tempering is cool if you have the patience and money for it. And I’ve made toffee and caramel many times
I tried to make some hard candies. Didn't go very well and they got all tacky and pulled hard on my teeth when I tried to eat them. I guess the temperature was wrong.You can hurt yourself pretty bad with the molten sugar too, but it doesn't bubble hard or spit really so just be careful with it and you'll be fine.
I'm too scared of liquid sugar burns. Candy is like the cheapest thing in the world. It's just pure sugar. Just buy it.
I read about an accident where a worker full on got hit by a wave of hot molasses from a ruptured tank.Goddamn that stuff is nightmarish.
