even after 24 hours soaking and hours of cooking they dont go fully soft how do i fix? i read baking soda helps but also takes away the flavorplease help
maybe the peas you're using suck and buying a different brand would work bettertry the baking soda method with pour boiling water + soak overnight
Salting the cooking water can fuck with the texture. Add the salt later. Otherwise just nuke in the pressure cooker

Add the salt later.Tests have been done and salt actually makes for softer peas/beans/lentils. What keeps them firm is acidic ingredients and that needs to be added after they've softened.

Or just add them to any vegetable soup or stew to bulk it up.I usually use red lentils for garlic dal, or "Lasooni Masoor Dal".
