Peeled fresh tomatoes, jalapeno, peeled whole garlic, quartered yellow onions and fresh cilantro from my garden along with a 4% salt brine was used to fill a reused glass gallon pickle jar to ferment for one month. I then drained it and used a stick blender to turn it into a smooth salsa. I proceeded to pour the blend into a half-gallon glass pickle jar with a tight-fitting lid, where it now sits in my refrigerator door.
