I think pizza needs the tomato sauce to help cut through the richness of the mozzarella. I've had a few different variations on pizza without it, but I find if they use a pizza amount of cheese then each bite gets heavier and I'll usually give up halfway through the slice. Flatbreads are kino tho.

Also it needs an extreme amount of grated parmesan on top to really be good. Do it at home with your own parmesan otherwise it will never be enough.

The only "white" pizza I like is a breakfast pizza from a local sports bar, they use pepper gravy as the sauce with a hollandaise drizzle. Everything else gets too savory before I even finish a slice
