IDK if anyone remembers but i posted a few weeks ago about getting my first big boy cooking job as a sou chef/ manager. It's like industrial big scale cooking...kind of. Anyway, I was interviewed last week by a literal panel of people. It was fucking insane, the most intense interview process I have ever had. They want me BUT, the next phase. Which i was totally unaware of, I have to cook a 4 meal course in front of another panel of people. Any words of advice?

17 years, ive said this time and time again to myself. I dont know why but i turn into a neurotic mess sometimes, especially with my life and future on the line. This job is life changing so it freaks me out. I just have to use the skills ive aquired to, just do it. Properly. Idk man im still nervous at the end of the day but i think i can do it. I just hope i dont ..make some dumb mistake that that completely eliminates me right off the bat.

So, if I remember correctly they will give you a heads up on the 4 meals. Probably just the day or hours before. I don't get to choose as far as I know. I should text the main guy to ask him about that. He seemed like the chillest out of them all so for some reason I feel like that wouldnt be crossing a line, or like he wouldn't mind if i did.

The anon who knows food safety protocol and is ServSafe certified (if I remember right). The anon who knows how to cook a 4 meal course and can rise to the challenge.
