Why the fuck do I have to turn everything into a proper cooked meal. I eat fruit raw, bell peppers and spicy peppers are easily eaten raw. Could I eat a whole ass cabbage raw? Broccoli? Raw lentils? A whole can of tomatos?

Longer answer is that cooked vegetables are generally healthier just because your body has an easier time extracting the nutrients. But when it comes to a matter of convenience, don't let that stop you from eating it raw.

You want to at least blanch things like cabbage and broccoli in boiling water for a few seconds.
This is to protect you from soil-based pathogens such as bacteria, protozoa and worm eggs.

Thats funny because sprouts are one of the few foods anyone can grow effortlessly on their kitchen counter. The home sprouter get massive returns for minimal investment while the sprout buyer gets to pay an exorbitant price for a tiny amount of possibly human feces contaminated sprouts. I would never ever buy sprouts. They're so easy to grow in under a week on your countertop.

It's harder to digest. Raw carrot takes a long time to chew. Soft cooked carrots are sweet and easy to digest and you end up absorbing more nutrients since we don't digest raw vegetables as well.

A lot of fruits are "meant" to be eaten raw, peppers are fruits. But some like apples are still easier to digest when cooked.

Yes but your overall intake will probably be lower than with cooked vegetables because they're harder to digest.

Raw lentils and beans have lectins that can make you sick if they're not properly cooked. Kidney beans especially will make you really sick if you eat them raw.

That's probably more of an issue with no iodine in the diet. It was a problem in the USA too before iodized salt was created because of inland populations who weren't consuming any seafood that naturally has iodine and the soil was low in it.
