New Mexican is quite good. They do more of the flour tortillas than corn. Dried and powdered chile heavy and lots of hominy/nixtamal. Good eating. Pork city. Colorado is the same, but almost zero chicken.

I got a taste for offal tacos when I was living in Texas. I now live 2k miles away and I sorely miss tripas and lengua.
At least I can still make decent fajitas and salsa at home.

>Uncover your egg, the cheese is now melted. Fold into an omelette or roll it onto itself. Then use the spatula to cut it into strips and place strips, usually 3 or 4, in the tortilla long ways

It is a pain in the ass to fold but delicious
