Chef John is great as a source of recipes for most cuisines, and you'll slowly build up techniques by watching him too. His stuff is a good baseline to build off of.Internet Shaquille is another food YouTuber I like. He has a couple of good Mexican recipes (and https://www.youtube.com/watch?v=DqTsb9N3cqY is a good one to start with) and he spends a bit more time on the underlying principles of cooking than Chef John.There is also The Roux Brother.
