for me it's salo or slanina as we call it, or pacha, which is a soup made from pig's ears and trotters.

clean them of grit or weird looking spots
boil for a couple of hours or 30-45 minutes in a pressure cooker, then fry with herbs and butter, alternatively, put bay leaf, onions, carrots, etc. in the water you boil them and use the broth to make them with some rice on the stovetop or the oven.
some people pre-boil them (put them in cold water and bring to a boil) and discard that water before continuing, idk if that's really necessary or if it's some housewife bullshit

If you dont mind the chewy texture (I love it) you can simply boil them for like 8 minutes on high.

they're chewy after two hours too, they always struck me as something like mushrooms where it's practically impossible to overcook them by boiling. but i've got to figure they're much chewier after just 10 minutes. next time i'll fish one out of the water early to check it out though.
