What gives store bought ginger ale/beer that distinct taste, same with pickled ginger. And no, ginger alone doesn't have that taste. There is some process that brings that flavor out but I don't know what it is. Does it need to be fermented for a long period? Is it pickling it with vinegar? I can't find any information on it.I have made ginger beer many times but I have yet to capture that taste. All the online ginger beer recipes are essentially the same, just carbonated ginger tea, not actually ginger beer.
