We can. What do you think the standard steak experience is? You only need to rescue bad steak with ketchup or A1.

Bread can be enjoyed by itself too. Is butter a sauce? It's just 1 ingredient, I'd say that prevents it from being a sauce, since all sauces have at least 2 ingredients (per french mother sauces official formulation).

Chips are also typically enjoyed sauce free. Not french fries, but potato chips. Sure nachos are a thing, but that is for bland corn chips.

Soups also don't really have sauces added to them either. But I guess if it contains a roux it is by definition a sauce due to french sauces containing roux as the primary ingredient (outside mayo).

Yes, it's mayo with whatever secondary ingredient to thin it out or change the flavor a bit. Avocado, garlic, peppers, truffle, etc.
Tartar sauce is just mayo with diced dill pickles.
