Experiment concluded. 8oz ground beef is too large for even a "restaurant size" brioche bun. I also think 2oz and not 2.5oz is the right size for a single smash pattie.Burger thread.

That lands it easily somewhere between medium rare and medium. I don't like rare burgers but I don't think there's anything wrong with medium rare. My personal preference is a true medium for ground beef unless I grind it myself.
