Most good hot sauces need days, weeks, or months in storage for the flavors to fully develop. Some like Tabasco are even fermented and aged in wooden barrels for years. Sure you could do that at home, but it's a big investment of time and equipment. Marinades are normally made on the spot and don't even need to be shelf-stable.
