what are the secrets to marinated meat and chicken? when i put it in the pan it just makes a soup, even after draining and patting the meat, does it only work in bbq?

I dislike the idea of marinading food that goes into a panIts a good idea to brine chicken, but why burn some spices on a hot pan. You could add the flavors afterwards. Its not like the flavors penetrate the meat.

Marinades are surface treatment. You cannot infuse meat with spices beyond a very thin surface layer, meat just does not work that way.
