any ruut vegetable soup is top comfy especially in the colder seasons. I never make mine chunky like that and I really should. I'm just lazy and blend the whole thing rather than reserve some of the chunks

It comes in a bottle. Mix with boiling water as directed then add your mushrooms/scallions/etc. Maybe a couple drops of sesame oil for texture too.

collect as many rooty vegetables and tubers as you can find, including some leek or shallot or onion, something to garnish like chives is nice and maybe some diced bacon.

I like to use (depending on what's available):
>potato
>sweet potato
>punkin or butternut
>celery
>turnip/swede
>couple cloves of garlic
>whatever oniony thing you have as per above
>carrot

Boil it all in veggie stock with some herbs of choice - you can stick with standard black pepper and thyme or go more exotic and rooty with allspice and a teeny pinch of nutmeg, salt to taste

When it's all soft you puree it with a stick or standard blender and simmer while you add some heavy cream. Garnish with chives or scallions and diced bacon, little pinch of cheese and a heavy dash of hungarian paprika brings it to the next level. It's cheap, easy, and you can make as big or small a batch as you want it's supremely nourishing in chilly weather

I used to get a similar clear soup with chunks of turnip in it when I was in Taiwan. It was breddy gud.
