When I make my own nachos I literally just melt whatever cheese I have on hand. I never personally buy "cheese sauce" so I almost never eat it unless I buy nachos at a movie or event because that's usually what they have. I don't consider them to be two different things, either way it's just nachos. Hell, even OP's definition is fancier than mine because most of the time I don't even have jalapenos to put on it, maybe just some hot sauce or salsa if I have it.

To add to this: My father is 80 years old. Everyday he eats chia seeds, greek yogurt, nuts etc. All healthy stuff. He's been doing this for at least 35 years. I can count health conscious millennials I know on 1 hand. Anyone in my age group that lost weight did it via ozempic. Our generation talks a big game but doesn't commit most of the time.

Sour cream, tomatoes, onions, maybe pico, a protein, etc. I'm personally okay with just microwaved chips or saltine crackers covered in shredded cheese, some garlic salt, and some red pepper flakes. Better if baked in the oven though.

That's my ideal way to make them at home. Did you just make that up? I don't usually have jalapenos so banana peppers or an appropriate hot sauce will make do in its stead.
