When I got into making sauerkraut, I put a lot of time into researching probiotics and it's basically worthless. Nowadays I only make sauerkraut because the store stuff is mushy garbage.

If it's not chilled, it's pasteurized. And the chilled is overpriced AF for being cabbage+salt. Lactobacillus concentration is also highest a week in, there is no need to let it sit around forever.
