You might've just underseasoned it. I've made salads like that and thought they were pretty good. You need more salt/oil/vinegar than you might think.
The few attempts i've had with red, is that they always turn into mush.

Even if you only eat skinless beans and lentils, if that's a large part of your intake you'd still be getting a lot of fiber.

>>22098240If you don't want them to be mushy, quick soak them for 15 minutes - bring them to a boil then remove from heat and let it sit for 15 minutes.Then steam cook them for 6 minutes. if you want them even chewier, refrigerate them and eat them cold. I put aspertame on my starches to make them taste sweet which is more palatable to me.

They'll retain their shape and still be safe to eat. This one is good if you intend to cook them into another dish, like traditional kedgeree/kijdi, lentil sloppy joes/keema pav or lentil loaf and burgers.The other is to soak, steam and shock. This is the one that's good for salad. I put steamed lentils in rice salads.
