lentils only turn to mush because the outer shell thing is removed on some, right anons? can you make yummy stuff with lentils when they have the thing still on? i tried makin some salad type thing with brown lentils and it was kinda bad

Overcooking whole lentils will still turn into mush, just with lentil skins in it.

What did you put on it? You might've just underseasoned it. I've made salads like that and thought they were pretty good. You need more salt/oil/vinegar than you might think.

The best lentils come from Castelluccio, in Italy.Their outer shell is so thin it can be ignored. The problem with Castelluccio is that it gets severe earthquakes though.Some years their lentils are available, so years they aren't.

Other lentils are a waste of time an money.

how come indians dont just do that then, the skin is pretty healthy for ya, whole legumes are basically the only way to get a decent amount of fiber nowadays

Maybe just convenience or variety, but removing the skin also makes it a little easier to digest which could be a concern if the majority of your food intake is going to be beans and lentils. Even if you only eat skinless beans and lentils, if that's a large part of your intake you'd still be getting a lot of fiber.

it's entirely about how much you're going to eat. If you try to eat a pound of green lentils as one of your main starches for the day you are going to overwhelm your ability to pass all that fiber and be a gasbag. But split lentils you can eat like potato

If you don't want them to be mushy, quick soak them for 15 minutes - bring them to a boil then remove from heat and let it sit for 15 minutes.
Then steam cook them for 6 minutes. if you want them even chewier, refrigerate them and eat them cold.
I put aspertame on my starches to make them taste sweet which is more palatable to me.

There are two ways to do this: pressure cook for 12 minutes then off the heat and let it depressurise naturally. They'll retain their shape and still be safe to eat. This one is good if you intend to cook them into another dish, like traditional kedgeree/kijdi, lentil sloppy joes/keema pav or lentil loaf and burgers.
The other is to soak, steam and shock. This is the one that's good for salad. I put steamed lentils in rice salads.
