marinate it for a day in pineapple juice
if you are going the fresh route, i.e. you bought an actual pineapple, wash the skin, cut it off the fruit into small pieces, and blend it with some of the fruit (nobody I've known has ever finished a whole pineapple's fruit before it goes bad) to make the marinade. the pineapple skin contains more of the enzyme that breaks down the meat than the fruit iirc. just make sure you get it in small enough pieces so that your blender doesn't kill itself
