We do stuffed marrows. I prefer them to peppers, but the concept is similar.IMHO, don't add rice. Just plain meat/eggs/cheese works better, especially if they are the main attraction on the plate with a carb on the side.I can understand adding rice, if they are more of a side dish.

Stuffed bell peppers is a secondary, semi-leftover, "easy" meal for me. (like fried rice, zuchini boats, or leftovers burritos)I make it a day or two after I've made meat sauce for Spaghetti. I mix all the leftover meat sauce with some rice, put it in bell peppers with cheese, and bake them in the oven.Easy dinner with minimal preptime.
