How do I stop my burger patties from shrinking when I cook them? I tried the dimple trick, should I try the ice cube trick?

Don't cook them for longer than 30 seconds on each side on a hot pan. You're taking a delicious soft and juicy burger and making it hard, chewy, tasteless and dry if you cook it any longer.

After you form the patties you leave them uncovered in the fridge.
This does two things;
-When you put the patties on the heat the core holds up a little longer so the outside becomes a crust in the shape it was before the core collapses and tightens when it starts to lose its water and fat
-It dries the patty a little, the outside crusts better on the heat since there's less water to steam away first

dont listen to these other anons. the trick to making your burgers not shrink is to mix in 2, yes 2, sticks of butters into each patty. the butter will trick the heat and it will render all of the butter out before any of the fat from the meat gets rendered out and will keep your burger nice, thick, and juicy.
