I've made canola cookies before and they were pretty good ngl

All-purpose flour 2 1/2 cups (625 mL)
Baking soda 1 tsp (5 mL)
Canola oil 1 cup (250 mL)
Brown sugar 1 cup (250 mL)
Vanilla extract 2 tsp (10 mL)
Semi-sweet chocolate chips 1 cup (250 mL)
Chopped walnuts (optional) 1/2 cup (125 mL)

Instructions
Preheat the Oven: Set your oven to 350ºF (180ºC) and line two cookie sheets with parchment paper.
Mix Dry Ingredients: In a large bowl, whisk together the flour, baking soda, and a pinch of salt.
Combine Wet Ingredients: In another bowl, mix the canola oil, brown sugar, and granulated sugar until smooth. Beat in the eggs and vanilla extract until the mixture is lump-free.
Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring with a sturdy spoon until just combined. Avoid over-mixing.
Add Chocolate and Nuts: Fold in the chocolate chips and walnuts if using.
Shape Cookies: Drop spoonfuls of dough onto the prepared cookie sheets, spacing them about 2 inches apart.
Bake: Bake for 10-12 minutes or until the edges are lightly golden.

One benefit beyond being much healthier is that the cookies stay much more moist and chewier than if you use butter.

It perfectly compliments so many things. Salmon, beef, bread, noodles. I love butter and haven't used any alternative for many years. My dad used to buy margarine until I was about 12 when he realized it wasn't worth saving a few cents to compromise on quality. Butter is so much better.

Jokes aside, if you buy clarified butter it usually doesn't have the same nutty taste that ghee does. I'm not sure why that is, since they're made the same exact way.
