How can I trick my brain into liking fish?
As long as I remember I absolutely hated it, the taste, the texture, everything no matter how it was prepared but nowadays when I'm going to the store the regular meat prices are just insane and I'm not even talking about some nice cuts, just the "cheap stuff".
I could get a fishing licence here for like 5$ a month, borrow one of the rods my dad has and didn't use in 15y and get infinite protein for free from a canal that's literally 15min of walking away from where I live.
I mean i hate killing animals and gutting them is disgusting but I know how to do it since my dad was taking me fishing when I was a kid but Jesus Christ man everytime tried to eat it it just triggers my gag reflex.

my point was that you’re gonna have to work up to it, as in acquire the taste. if you can’t stand eating seafood I can’t see you brute forcing yourself way into it by cooking up the fish you caught down at the river. those can be pretty gamey in my experience. maybe if you were starving you could “trick” yourself into liking it, otherwise you need to be MK ultra’d or something.

The way you describe fish is how i feel about chicken. So, I’ll tell you what i do when i have to eat chicken.

I will cook the hell out of a chicken breast and use it for chicken salad. When you overcook it, the flavor isn’t as strong and the texture is different. It’s a drier texture that will adopt the mayo-y salad more than its original texture.
I’ve actually done a similar thing for some really old freezer burned salmon, works like a charm - pic rel, it has dill havarti in it

One of the few chicken dishes i enjoy is Manchurian chicken. You can barely tell you’re eating it!
I think for a fish version of this, try Goan Fish Curry. I love that dish because it’s tangy and delicious, the fish texture is a little different than what you’re probably used to from simmering in the sauce too.

Make a bisque-style soup, and kinda like the curry suggestion, make sure there’s an additional strong flavor. Maybe like borscht with fish

If I gave you a mackerel I caught this morning that spent it's life in the deep sea, it's going to taste fucking fantastic. If I gave you some shitty bottom feeder fish like a carp I caught a few days ago in some nasty muddy pond, it's going to taste like foul mud. Even worse if I froze it.

Do you recall what kind of fish you had in the past? What kind of fish live in the canal?

There’s definitely some varieties of fish I don’t like, but I recently started doing fresh fried battered fish with homemade tartar sauce and it really got me in a fresh fresh mode

What else is in that canal? IDK about where you live, but the nearest "canal" to me is a "sanitary canal" which in plain English means "a ditch they dug a hundred years ago to move sewage from the city to a treatment plant way outside of city limits."

If I want to fish, I go to a wilderness lake where the waters aren't contaminated with fertilizer/pesticide/evenworse runoff from nearby homes, farms, or industrial sites.

Sorry. Just something you IMHO really should consider before chowing down on something that's going to mutate your genes.

you can catch like 20 bluegill or crappie in an hour in a good spot if you find a good pond and fish when the sun is setting and they're eating mosquitos. filet them and batter them and fry them. freeze the rest, you can fill a freezer easy
some people might says its wasteful to not eat the whole fish but bluegill breed so rapidly they're basically pests where i live theres no limit on how many you can catch. also you hate fish so fried fish is the best cause it basically tastes nothing like fish i dont know how that works

Very good point. Some of the rivers in my state have signs that explicitly say not to touch the water or eat the fish due to toxic contamination.

Maybe at your LGS, certainly not at mine. Not even close, at least not at the grocery store I've seen it in around here. Also especially Costco, holy shit are they bad, it's gas-station-tier sushi (some outside company makes it and sells it there, it's not made by Costco itself) that sits in a cooler for sometimes a couple of days. until someone gets around to buying it. I bought it once and it was so bad I threw half of it away.

And I write this as someone who absolutely loved Sushi Express in Taiwan. Conveyor belt sushi is proof Dagon loves us and wants us to be happy as we help him bring about the end of humankind.

Costco's deli USED to make a really great fresh "poke bowl" of chopped up salmon and various sauces (two or three choices), but they quit doing it at my location because "nobody buys it so it all goes to waste", which is bullshit because I had to get there early to buy it if I wanted some; it ALWAYS sold out by early afternoon.
